2 cups cooked chicken, shredded
1 medium carrot, finely grated or steamed
2–3 tbsp mayonnaise (or Greek yogurt for lighter version)
1 tsp mustard (optional)
Salt and pepper to taste
1 clove garlic, minced (optional)
1 tsp lemon juice
Fresh herbs (parsley or dill), chopped for garnish
