2 large eggs
1 cup milk (or buttermilk)
⅓ cup olive oil
½ cup plain yogurt
Optional Mediterranean Add-ins
⅓ cup sliced olives
¼ cup sun-dried tomatoes
2 tbsp fresh parsley or basil
Instructions
1 Preheat Oven
Preheat to 180°C (350°F)
Grease or line a loaf pan.
2 Mix Dry Ingredients
In a bowl, whisk flour, baking powder, baking soda, salt, and spices.
3 Mix Wet Ingredients
In another bowl, whisk eggs, milk, olive oil, and yogurt until smooth.
4 Combine
Pour wet ingredients into dry ingredients.
Mix gently (do NOT overmix).
5 Add Cheese & Extras
Fold in shredded cheese, Parmesan, and optional ingredients.
6 Bake
Pour batter into pan.
Bake for 40–50 minutes until golden and cooked through.
7 Cool & Serve
Let it cool for 10–15 minutes.
Slice and enjoy warm or at room temperature.
