For the Meat
3 to 4 pounds beef roast, pork shoulder, brisket, or similar cut
2 tablespoons olive oil
1 tablespoon butter
1 large onion, sliced
6 garlic cloves, minced
3 carrots, chopped
3 potatoes, chopped
2 celery stalks, chopped
For the Seasoning
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon onion powder
For the Cooking Liquid
2 cups beef broth
1 cup tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon honey or brown sugar
Equipment Needed
Dutch oven or large roasting pot
Sharp knife
Cutting board
Wooden spoon
Oven or slow cooker
Preparation Method
Step 1: Prepare the Meat
Pat the meat dry with paper towels. This helps create a beautiful crust when searing.
Mix together all seasonings in a bowl and rub them generously over the meat.
Let the meat rest for 20 minutes so the flavors can absorb.
Step 2: Sear the Meat
Heat olive oil and butter in a large Dutch oven over medium-high heat.
Sear the meat on all sides until deeply browned. This step locks in flavor and creates a rich caramelized surface.
Remove the meat and set aside.
Step 3: Cook the Vegetables
In the same pot, add onions, garlic, carrots, celery, and potatoes.
Cook for 5 minutes until slightly softened and fragrant.
Step 4: Build the Sauce
Pour in the broth, tomato sauce, Worcestershire sauce, soy sauce, and honey.
Stir well and scrape the browned bits from the bottom of the pot. Those bits contain huge flavor.
Step 5: Slow Cook
Return the meat to the pot.
