Step 1: Prepare the Oven and Pan
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easier removal after baking.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 3: Cream Butter and Sugar
In a large mixing bowl, beat the butter and sugar together for about 2–3 minutes, until the mixture becomes light and fluffy. This step helps create a soft cake texture.
Step 4: Add Eggs and Flavorings
Add the eggs one at a time, mixing well after each addition. Then mix in the sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
Step 5: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture. Mix gently until just combined. Avoid overmixing to keep the cake tender.
Step 6: Bake the Cake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
