luxurious lemon loaf

We eat 100% from scratch and 100% organic in our home. This recipe is a decadent delight because it's not made from a box mix. It's made with whole, natural, and delicious ingredients that come together for a fantastic zing to your tastebuds. It's wonderful as a dessert and divine with coffee. My friends and family love this recipe.

 

This lemon loaf is better than anything you'd find at a coffee shop. There's a nice balance of sweetness and tartness in this treat. The from-scratch cake is moist, very lemony, and not overly sweet. With not a lot of baking powder, it does not have the same rounded top as other quick breads. The simple lemon icing adds additional lemon flavor but also a touch more sweetness. A slice will be wonderful with coffee or hot tea

Ingredients

BREAD
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 large eggs, room temperature
1 cup granulated sugar
4 tablespoons butter; softened
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon lemon zest
1/3 cup lemon juice
1/2 cup coconut oil

LEMON ICING
1 cup powdered sugar

2 tablespoons whole milk
1/2 teaspoon lemon extract
1/4 - 1/2 teaspoon lemon zest
How To Make luxurious lemon loaf

Step 1
Preheat oven to 350 degrees F. Combine flour, baking soda, baking powder, and salt in a bowl.

 

Step 2
Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract, lemon zest, and lemon juice in a medium bowl.

 

Step 3
Mix wet and dry ingredients together.

Step 4
Add oil.

Step 5
Mix well.

Step 6
Pour batter into a well greased 9x5-inch loaf pan.

Step 8
Remove from the oven and allow to cool for 10 minutes. Remove the loaf onto a cooling rack.

Step 9
Make the lemon icing by combining the icing ingredients in a small bowl with an electric mixer at low speed. Add milk until it is able to drizzle.

 

Step 10
Drizzle icing onto the cooled lemon loaf. Let the icing set up before slicing.
