Skinny Greek Chickpea Salad

Serve alone as a side dish or as an appetizer with pita chips or lettuce wraps

 

I love chickpeas!
Serves 6 | 5 PersonalPoints per serving | Cooking time: 10 minutes

Ingredients needed:
Chickpeas
Bell pepper
Tomatoes
Cucumber
Feta cheese crumbles
Avocado
Red wine vinegar
Extra virgin olive oil
Fresh squeezed lemon juice
Minced garlic
Fresh parsley
Dried crushed oregano
Sea salt
Fresh grated black pepper
Fresh dill

 

How to make this Skinny Greek Chickpea Salad:

Step 1. Using a strainer drain and rinse the chickpeas.

Step 2. Add the bell pepper, tomatoes, and cucumber in a large bowl.

Step 3. Toss together.

 

Step 4. In a small bowl add the red wine vinegar, olive oil, lemon juice, minced garlic, parsley, oregano, salt, pepper, and fresh dill. Whisk to mix well.

Step 5. Pour the dressing over the salad.

 

Step 6. Add chickpeas and Stir well.
