Ingredients:
* 2 cups dried pinto beans, rinsed
* 6 cups water
* 1/2 onion
* 2–3 cloves garlic
* 2 tsp salt (divided)
* 3 tbsp lard, bacon grease, or oil
* 1/2 tsp cumin (optional)
Instructions:
1. Add beans, water, onion, garlic, and 1 tsp salt to a pot. Bring to a boil.
2. Reduce heat, cover, and simmer 1–1.5 hours until beans are very soft.
3. Drain beans but keep the cooking liquid.
4. In a skillet, heat lard or oil. Add cooked beans and mash lightly.
5. Slowly add bean liquid until creamy and smooth.
6. Season with remaining salt and cumin if desired.
7. Mash to your preferred texture—chunky or silky!
